This herb-roasted aubergine with tomatoes and feta is a celebration of simple, Mediterranean flavours. By roasting the aubergine at a high temperature, it develops a wonderfully creamy texture and a rich, smoky depth that contrasts beautifully with the acidity of the roasted plum tomatoes. The addition of sherry vinegar provides a subtle brightness, cutting through the richness of the vegetables for a perfectly balanced vegetarian dish.
Ideal as a light midweek meal served with crusty sourdough or as a vibrant side for a larger Sunday spread, this recipe is naturally gluten-free and packed with nutrients. The final scattering of salty, crumbled feta and fresh oregano adds a punchy, savoury finish that elevates the humble ingredients into something truly special. It is a reliable, fuss-free option for anyone seeking a healthy, flavourful homemade supper.
