Herbed Goat-Cheese Toasts

These elegant herbed goat's cheese toasts are the quintessential vegetarian canapé for any seasonal gathering. By folding softly whipped double cream into mild, tangy goat's cheese, you create a light and mousseline-like texture that contrasts beautifully with the crunch of the golden baguette. The inclusion of fresh, tender herbs like chives and tarragon provides a bright, aromatic lift that makes this simple snack feel truly sophisticated.

Perfect as a dinner party starter or a relaxed weekend nibble, this versatile recipe can be adapted with whatever herbs you have to hand in the garden. For a more robust flavour, woody herbs like rosemary and thyme work equally well. These toasts are best served while the bread is still slightly warm from the oven, allowing the creamy topping to melt just enough upon contact.

Put oven racks in upper and lower thirds of oven and preheat oven to 177°C.
