This citrus-infused lemon and herb mayonnaise is a versatile dairy-free condiment that brings a bright, fresh flavour to a variety of savoury dishes. By combining a medley of tender green herbs like parsley, chives, and tarragon with zesty lemon, you creates a sophisticated dip or spread that far surpasses any shop-bought alternative. The addition of a little grated garlic provides a subtle depth that balances the acidity perfectly.
Whether you are serving it alongside poached salmon, using it as a vibrant dressing for a potato salad, or simply as a dip for crunchy crudités, this homemade sauce is a fantastic addition to your repertoire. It is particularly well-suited for summer entertaining and can be prepared a few hours in advance, allowing the herbal notes to infuse beautifully before serving.
