This mango and radicchio caprese with basil vinaigrette is a vibrant, modern take on the traditional Italian salad. By swapping tomatoes for succulent mango slices, the dish gains a tropical sweetness that beautifully offsets the peppery bite of fresh basil and the mild bitterness of radicchio leaves. It is a stunningly colourful starter that relies on the contrast between creamy mozzarella and the bright, zesty notes of a homemade herb dressing.
As an elegant vegetarian dish, it makes a sophisticated addition to a summer lunch or a light evening meal. The inclusion of white balsamic vinegar ensures the vinaigrette remains light and clear, allowing the natural colours of the fruit and leaves to shine. Serve this refreshing salad with crusty sourdough bread to soak up the remaining basil-infused oil for a truly satisfying seasonal treat.
