This creamy pumpkin pasta is a sophisticated choice for a vegetarian midweek meal, offering a depth of flavour that belies its simple preparation. The combination of velvety pumpkin purée and double cream creates a luxurious, silk-like sauce that clings perfectly to the pasta. Infused with sweet Spanish smoked paprika, the dish carries a gentle warmth and earthy aroma, making it a wonderful comforting option for cooler autumn evenings.
Quick to assemble using store-cupboard staples, this heart-healthy vegetarian dish is ideal for busy households seeking a nutritious yet indulgent dinner. The addition of fresh flat-leaf parsley provides a bright, herbal contrast to the smoky notes of the sauce. Serve this vibrant orange dish on a large platter with a final flourish of cracked black pepper for a simple, seasonal feast.
