Pasta with Tomatoes and Mozzarella

This vibrant tomato and mozzarella pasta is a celebration of simple, high-quality ingredients. By marinating sun-ripened tomatoes with fragrant basil and extra-virgin olive oil, you create a rustic sauce that relies on freshness rather than long simmering. The warmth of the freshly cooked pasta gently softens the mozzarella, resulting in a light yet satisfying vegetarian meal that captures the essence of Mediterranean cooking.

Ideal for a quick midweek dinner or a relaxed weekend lunch, this dish is as versatile as it is effortless. The tomato base can be prepared several hours in advance, making it a brilliant option for busy schedules. Simply toss the mixture with hot, salted pasta for a nutritious and comforting bowlful that the whole family will enjoy.

DO AHEAD: Tomato mixture can be made 8 hours ahead. Cover and chill. Bring mixture to room temperature before tossing with hot pasta.
