This elegant vegetarian dish of peach and blue cheese toasts offers a sophisticated balance of flavours and textures. Sweet, juicy peaches are lightly poached to remove their skins before being paired with the salty, creamy tang of a quality blue cheese such as Saint Agur. The addition of honey and lemon adds a bright acidity that cuts through the richness of the cheese, making it a perfect seasonal choice for a light lunch or a dinner party starter.
Using rustic, country-style bread provides a robust base for the toppings, while a handful of peppery baby rocket adds a fresh, savoury finish. It is an effortlessly stylish way to make the most of stone fruit during the summer months. For the best results, ensure your peaches are perfectly ripe and serve the toasts immediately while the bread is still crisp and slightly warm.

How to make Peach and Blue Cheese Toasts
Back to contentsUsing the tip of a paring knife, score an X in the bottom of each peach. Cook in a large saucepan of boiling water just until skins begin to peel back where cut, about 1 minute.
Using a slotted spoon, transfer to a bowl of ice water; let cool. Peel; cut over a small bowl into wedges, collecting juices. Add lemon juice and honey and toss to combine.
Toast bread, brush with 2 tablespoons oil, and season with salt. Spread cheese on toast and top with peaches, leaving juices behind. Whisk 60ml oil into juices. Toss purslane with enough dressing to lightly coat in a bowl; season with salt and pepper. Arrange over toasts.
