Roasted-Jalapeno Pimiento Cheese Toasts

These roasted jalapeño pimiento cheese toasts provide a sophisticated, spicy twist on a classic savoury spread. By charring the fresh peppers until blistered, you unlock a deep, smoky sweetness that perfectly balances the sharp tang of the grated cheddar. The addition of cayenne and Worcestershire sauce adds a subtle heat and depth, making this an irresistible choice for a casual lunch or a versatile party appetiser.

As a satisfying vegetarian dish, this pimiento cheese is best enjoyed piled high on lightly toasted ciabatta. Serving with sharp, vinegary pickles provides a refreshing contrast to the rich, creamy cheese topping. For those who like to plan ahead, the cheese mixture can be prepared well in advance and kept in the fridge, allowing the flavours to develop further before serving.

Ingredients for Roasted-Jalapeno Pimiento Cheese Toasts

  • 1 red pepper

  • 1 jalapeno

  • 180ml mayonnaise

  • 1 1/2 teaspoons Worcestershire sauce

  • 1/4 teaspoons cayenne pepper

  • 1/8 teaspoons paprika

  • 450g sharp cheddar, grated

  • Kosher salt, freshly ground pepper

  • 1 ciabatta loaf, halved lengthwise, lightly toasted

  • Pickle slices (for serving)

Roast pepper and jalapeno over a gas flame, turning often, until skin is blistered and charred all over, 5–10 minutes. (Alternatively, grill on a rimmed baking sheet.) Transfer to a medium bowl and cover with plastic wrap; let steam 10 minutes.

Peel and seed peppers, then finely chop. Mix mayonnaise, Worcestershire sauce, cayenne, and paprika in a medium bowl. Fold in cheddar and chopped peppers; season with salt and black pepper. Spread on ciabatta and slice crosswise into pieces. Serve with pickles.

Pimiento cheese can be made 5 days ahead. Cover and chill.
