This roasted potatoes and asparagus with parmesan is a versatile vegetarian side dish that celebrates the fresh flavours of the season. The combination of earthy potatoes and tender asparagus spears provides a wonderful contrast in textures, while a high-heat roasting technique ensures everything is perfectly crisp and full of flavour. Finishing the vegetables with a generous dusting of Parmigiano-Reggiano adds a salty, savoury depth that beautifully complements the natural sweetness of the roasted greens.
Ideal for a busy midweek dinner or a classic Sunday roast, this healthy vegetable dish requires minimal preparation and just one baking tray for easy cleanup. The high oven temperature allows the potatoes to become golden and crunchy while the asparagus remains vibrant and tender. Serve it alongside your favourite protein or a fresh salad for a light, seasonal lunch.
