Shaved Cauliflower Salad

This vibrant shaved cauliflower salad offers a fresh and sophisticated take on raw brassicas. By using a mandoline to create wafer-thin slices, the cauliflower takes on a delicate, crisp texture that beautifully absorbs the zingy lime and mustard dressing. The addition of nutritional yeast and salty Parmesan provides a deeply savoury, umami depth that perfectly balances the bright citrus notes and bitter leaves.

As a versatile vegetarian side dish, this recipe is ideal for light lunches or as an elegant accompaniment to grilled mains. The combination of colourful lollo rosso and feathery frisée makes it a visually stunning addition to any table. It is naturally high in fibre and packed with vitamin C, offering a nutritious way to enjoy seasonal produce with minimal effort.
