Shaved Courgette Salad with Parmesan Pine Nuts

This elegant shaved courgette salad is a celebrated vegetarian side dish that highlights the delicate, nutty flavour of fresh summer vegetables. By slicing the courgettes into paper-thin ribbons, you create a beautiful texture that perfectly absorbs the zingy lemon and chilli dressing. The addition of aromatic fresh basil and toasted pine nuts provides a sophisticated crunch, making it a vibrant centrepiece for any seasonal spread.

Ideal for outdoor dining or a light lunch, this healthy salad is remarkably quick to assemble and requires no cooking beyond toasting the nuts. The salty shavings of Parmesan add a rich finish that balances the citrus notes beautifully. Serve it alongside grilled proteins or as part of a Mediterranean-style buffet for a refreshing, homemade meal that feels truly special.

Ingredients for Shaved Courgette Salad with Parmesan Pine Nuts

  • 80ml extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon coarse kosher salt

  • 1/2 teaspoons freshly ground black pepper

  • 1/4 teaspoons dried crushed red pepper

  • 900g medium courgette, trimmed

  • 1/2 cup coarsely chopped fresh basil

  • 1/4 cup pine nuts, toasted

  • Small wedge of Parmesan cheese

Whisk oil, lemon juice, 1 teaspoon coarse salt, 1/2 teaspoons black pepper, and crushed red pepper in small bowl to blend. Set dressing aside.

Using vegetable peeler or V-slicer and working from top to bottom of each courgette, slice courgette into ribbons (about 1/16 inch thick). Place ribbons in large bowl. Add basil and nuts, then dressing; toss to coat. Season to taste with salt and pepper. Using vegetable peeler, shave strips from Parmesan wedge over salad.
