Ingredients for Southern "One-Cup" peach cobbler

  • 675 g peaches, pitted, cut into 1.25 cm thick wedges

  • 10 ml finely grated lemon zest

  • 60 ml fresh lemon juice

  • 200 g sugar, divided

  • 5 g kosher salt, divided

  • 225 g unsalted butter, softened

  • 120 g plain flour

  • 6 g baking powder

  • 240 ml full-fat milk

  • 5 ml vanilla extract

  • vanilla ice cream or whipped cream (for serving; optional)

How to make Southern "One-Cup" peach cobbler

  1. Toss the peaches, lemon zest, lemon juice, 50 g sugar, and 1/4 tsp salt in a large bowl. Let the mixture sit, stirring occasionally, until it becomes saucy, about 15 minutes.

  2. Preheat the oven to 180°C (fan) or 190°C (conventional). Place the butter in a 33 x 23 cm glass or ceramic baking dish and heat in the oven until melted, 8–10 minutes. Remove the dish from the oven.

  3. Meanwhile, whisk together the flour, baking powder, remaining 100 g sugar, and 1/2 tsp salt in another large bowl. Add the milk and vanilla extract, then whisk until the batter is smooth and free of lumps.

  4. Pour the batter evenly over the melted butter in the baking dish without mixing it. Spoon the fruit mixture and 3 tbsp of the accumulated juices evenly over the batter.

  5. Bake the cobbler, rotating the dish halfway through, until the batter is puffed and lightly golden across the surface and browned around the edges, 40–45 minutes. Let it cool for 10 minutes.

  6. Serve with ice cream or whipped cream, if desired.
