Spiced pumpkin, lentil, and goat cheese salad

This spiced pumpkin, lentil and goat’s cheese salad is a sophisticated vegetarian dish that celebrates the earthy flavours of autumn. The natural sweetness of the roasted pumpkin or butternut squash is beautifully balanced by the heat of Spanish pimentón and aromatic cumin. Using French green lentils ensures the salad maintains a pleasant texture, providing a robust base for the peppery baby rocket and fresh mint leaves.

Ideal as a nutritious midweek lunch or a vibrant side dish for a weekend gathering, this recipe is as versatile as it is colourful. The creamy, tart finish of crumbled goat's cheese cuts through the spices, creating a well-rounded meal that is high in fibre and packed with iron. Serve it at room temperature to allow the complex flavours to shine.
