Stir-Fried Black Rice with Fried Egg and Roasted Broccoli

This vibrant stir-fried black rice with fried egg and roasted broccoli is a striking vegetarian dish that brings together bold textures and earthy flavours. The nutty, chewy profile of the rice provides a dramatic base for the golden-edged eggs and tender roasted florets. With its deep purple hue and nutrient-dense ingredients, this recipe transforms simple shop-bought staples into a wholesome meal that feels both nourishing and sophisticated.

Ideal for a quick midweek dinner or a healthy weekend lunch, this bowl is easily customised with creamy avocado and a savoury miso-turmeric dressing. The addition of toasted nori mayonnaise adds a delightful umami depth that complements the roasted vegetables perfectly. It is a fantastic way to use up leftover grains while ensuring a high-protein, plant-forward meal for the whole family.

  • 2 tablespoons vegetable oil, divided

  • 2 large eggs

  • Kosher salt

  • 375g cooked black rice (from about 190g uncooked)

  • 60ml Miso-Turmeric Dressing, plus more for drizzling

Heat 1 tablespoon oil in a large skillet over medium-high. Crack 2 eggs into skillet; season with salt. Cook until whites set around yolk and are golden around the edges but yolks are still runny, about 3 minutes. Transfer fried eggs to a plate.

Heat remaining 1 tablespoon oil in same skillet. Add rice and cook, stirring, until grains no longer stick together, about 2 minutes. Toss in 45g dressing; season with salt.

Divide rice between bowls and top with roasted broccoli, a fried egg, some nori mayonnaise, avocado, and coriander. Drizzle with more dressing.
