This elegant vegetarian dish reimagines the classic tomato on toast by incorporating a rich, homemade tomato butter. By slowly simmering fresh yellow tomatoes with shallots until concentrated and sweet, you create a vibrant base that blends beautifully with creamy unsalted butter. The addition of fresh marjoram introduces a delicate, floral herb note that cuts through the richness, offering a sophisticated alternative to standard breakfast spreads.
Perfect as a light lunch or a dinner party appetiser, these toasts are best served on crusty sourdough or a sliced baguette. The tomato butter itself is wonderfully versatile and can be prepared well in advance, keeping in the fridge for five days. Serve these golden slices with an extra grind of black pepper for a simple yet deeply satisfying seasonal snack.
