This toasted sweet corn pudding is a sophisticated take on a classic comfort food staple. By using toasted dried sweet corn, the dish gains an intensive, nutty depth of flavour that pairs beautifully with the tangy notes of buttermilk and a hint of sweetness. The result is a golden, custard-like texture that sits somewhere between a savoury side dish and a hearty bread pudding, making it an excellent addition to a festive spread or a Sunday roast.
As a versatile vegetarian dish, this pudding serves as a substantial accompaniment to roasted vegetables or a crisp green salad. The method is incredibly straightforward, requiring little more than whisking the ingredients together before slow-baking until set. For the best experience, serve it warm after a brief rest to allow the flavours to meld and the texture to firm up perfectly.
