This Treviso salad with orange vinaigrette and manchego is a masterclass in balancing flavours and textures. Treviso, a slender and slightly more delicate relative of radicchio, offers a sophisticated bitterness that pairs beautifully with the bright acidity of fresh citrus and floral honey. It is a stunning vegetarian dish that works equally well as a light lunch or an elegant starter for a dinner party with friends.
Toasted walnuts provide a necessary crunch, while the salty богатство of shaved Manchego cheese rounds out the sharp dressing. The addition of fresh flat-leaf parsley and zingy orange zest elevates the salad, making it feel wonderfully fresh and seasonal. Serve it alongside some crusty sourdough bread to mop up any of the delicious leftover vinaigrette.
