Whole Wheat Chapatis

These homemade wholemeal chapatis are a versatile addition to any Indian-inspired meal. Combining wholemeal and plain flour with a touch of creamy yoghurt, this dough produces a soft, pliable flatbread with a characteristic nutty flavour. The secret to the perfect texture lies in the resting period, which allows the gluten to relax, ensuring each round is easy to roll out before being charred to perfection in a hot frying pan.

As a staple vegetarian side dish, these chapatis are ideal for scooping up spicy dhals, rich chickpea curries, or cooling raitas. They are deceptively simple to prepare and far superior to shop-bought versions, offering a wholesome and heart-healthy alternative to heavier breads. Ingredients for Whole Wheat Chapatis

  • 130g wholemeal flour

  • 130g plain flour, plus more for dusting

  • 40g plain yoghurt

  • 1 tablespoon salt

Whisk wholemeal flour and 130g plain flour in a medium bowl. Make a well in the centre and add yoghurt, salt, and 180ml water. Mix with a wooden spoon until a shaggy dough forms.

Turn out dough onto a lightly floured surface and knead, adding more plain flour as needed, until dough is smooth, elastic, and no longer sticky, 8–10 minutes. Dust with more plain flour, wrap in plastic, and let rest at least 1 hour at room temperature.

Divide dough into 12 pieces. Working with 1 piece at a time and keeping the other pieces covered with plastic wrap, roll out on a lightly floured surface to 8" rounds (if dough springs back when rolled, let rest a few minutes before proceeding).

Heat a dry large skillet, preferably cast iron, over medium-high heat. Cook a round of dough until lightly charred in spots and browned in others, about 30 seconds per side. Transfer to a wire rack. Repeat with remaining rounds.

Chapatis can be cooked 45 minutes ahead. Wrap in foil and keep warm in a 121°C oven.
