These golden courgette and feta patties are a vibrant addition to any vegetarian repertoire. By combining coarsely grated courgette with salty feta cheese and a generous handful of fresh Mediterranean herbs, you create a fritter that is both light and satisfying. The secret to their crisp texture lies in thoroughly draining the vegetables, ensuring each bite offers a delightful contrast between the crunchy exterior and the tender, savoury centre.
Ideal as a seasonal starter or a nutritious light lunch, these homemade patties pair beautifully with a dollop of cool Greek yoghurt. They are versatile enough to be served as part of a larger mezze spread or enjoyed on their own with a crisp green salad. Because they can be prepared in advance and reheated easily, they are also a brilliant choice for stress-free entertaining or midweek meal prep.
