A decadent treat perfect for a summer celebration

This twist on the classic British dessert adds in some new flavours and textures. Whipped Greek yoghurt is a great alternative for heavy creams and the toasted almonds give this pudding its signature crunch.

Present this dessert straight from the freezer and it's guaranteed to be a crowd pleaser!

Ingredients

  • Low-fat Greek yoghurt
    500g 18oz
    Dairy, Lactose
  • Light double cream
    40g 1.5oz
    Dairy, Lactose
  • Strawberries
    200g 7oz
  • Blueberries
    200g 7oz
  • Raspberries
    200g 7oz
  • Flaked almonds
    100g 3.5oz
    Nuts

Cooking Method

  1. Combine the yoghurt and double cream in a bowl. Either by hand or with an electric whisk, whip the yoghurt until light and fluffy. It should have the consistency of thick cream.
  2. Heat a large pan on a low heat. Toss in the flaked almonds and toast for about 1-2 minutes, or until they're golden brown.
  3. Prepare the fruit. Make sure they are all washed before cutting. Dice the strawberries and half the raspberries. Combine all the fruit together in a bowl.
  4. Once all the ingredients have been prepared, use a loaf tin to assemble your dessert. Place a thin layer of whipped yoghurt on the bottom, followed by a layer of mixed fruit and a layer of almonds. Repeat this until the tin is full.
  5. Place the frozen yoghurt into the freezer and freeze for at least four hours. (Preferably overnight if you can.)
  6. Serve in four bowls with a mint leaf garnish if desired.
