These vibrant prawn and veggie tacos offer a fresh, high-protein twist on a Mexican-inspired favourite. Succulent prawns are briefly marinated in zesty lime to enhance their natural sweetness before being seared to perfection. The addition of golden sautéed courgette and crisp red cabbage provides a satisfying crunch and a boost of nutrients, making this a balanced meal that feels both light and indulgent.
Ideal for a quick weeknight dinner or a relaxed weekend gathering, this recipe is elevated by a smoky, homemade chipotle aioli. The creamy heat from the chilli perfectly complements the seafood and charred vegetables. Serve these colourful tacos in warm corn tortillas with an extra wedge of lime on the side for a bright, citrusy finish that the whole family will enjoy.
