Spaghetti with Tomatoes and Anchovy Butter

This spaghetti with tomatoes and anchovy butter is a sophisticated yet simple pasta dish that relies on high-quality pantry staples and fresh produce. The anchovies dissolve into the melted butter to create a rich, umami-heavy base that perfectly balances the sweetness of the softened fruit. It is an excellent choice for a quick midweek meal that feels more indulgent than the short preparation time suggests.

As a high-protein vegetarian-adjacent option, this recipe utilizes fresh tomatoes that break down into a rustic, vibrant sauce. The addition of fresh tender herbs like tarragon and flat-leaf parsley provides a fragrant lift to the savoury depth of the garlic and butter. Serve it in warmed bowls with a final crack of black pepper for a comforting and nutritious supper.
