Summertime Sōmen Noodles

This refreshing dish of summertime sōmen noodles is the ultimate antidote to warm weather. These delicate, thin wheat noodles are traditionally served chilled in a bath of ice water, offering a light and cooling texture that is incredibly satisfying. By layering the noodles with fresh rocket, creamy avocado, and protein-rich tofu, you create a balanced meal that celebrates subtle Japanese flavours such as savoury katsuobushi and nutty gomashio.

As a high-protein vegetarian-friendly option, this recipe is perfect for a quick lunch or a communal family dinner. The interactive nature of serving the noodles from a central bowl makes it a wonderful choice for entertaining. For the best experience, ensure your spring onions are sliced thinly on the bias and use a high-quality tamari to season the dish just before eating.

Ingredients for Summertime Sōmen Noodles

  • 1 (275g) package sōmen noodles

  • 1 large bowl filled with 240 to 475ml ice and water

  • Rice vinegar

  • Reduced-sodium tamari soy sauce

  • Sriracha sauce

  • Katsuobushi (Japanese dried bonito flakes)

  • Negi (spring onions, thinly sliced on the bias)

  • Furikake (Japanese seaweed seasoning)

  • Rocket or your favourite leafy greens

  • Kaiware sprouts (daikon radish sprouts)

  • Gomashio (toasted, salted, crushed sesame seeds)

  • Tofu cubes

  • Avocado slices

In a large pot of boiling water, cook the sōmen noodles as directed on the package. Drain the noodles and place them in a large bowl filled with ice and water to serve. Your sōmen noodles will be the highlight of the table, so serve them up in a gorgeous bowl.

Serve family-style in the middle of your table. Using tongs or chopsticks, place the noodles into individual bowls, shaking off any residual water before serving.

Add your choice of sauces and toppings. I usually top with a touch of shōyu and rice vinegar, and offer a variety of toppings— negi, katsuobushi, rocket, tofu, avocado slices, etc.
