These crispy salt and vinegar potatoes offer a punchy, sophisticated twist on the classic chip shop flavour profile. By simmering the baby potatoes in a vinegar-infused liquid before frying, the tang penetrates deep into the fluffy centres, while the skins crisp up beautifully in the frying pan. It is a simple yet highly effective way to elevate a humble side dish into something truly addictive.
This vegetarian recipe works wonderfully as a versatile accompaniment to grilled halloumi, roasted vegetables, or even as a standout snack for sharing. The addition of fresh chives and a final sprinkle of flaky sea salt provides a burst of colour and texture. For the best results, ensure the potatoes are patted completely dry after boiling to achieve that essential golden crunch.
