This sophisticated grilled sausage and fresh fig salad offers a beautiful balance of sweet and savoury flavours, making it an ideal choice for a light summer dinner. The heat from the spicy sausages pairs perfectly with the honeyed notes of ripe figs and the creamy tang of soft goat's cheese, while a pomegranate and cumin dressing adds a bright, zesty finish.
As a versatile main course, this dish is perfect for outdoor dining or a quick midweek meal that feels more special than your average salad. The addition of fresh mint provides a burst of fragrance that lifts the entire plate. Serve it with some crusty sourdough bread to mop up the juices for a truly satisfying and healthy meal.
