Grilled Chicken with Rocket and Warm Chickpeas

This grilled chicken with rocket and warm chickpeas is a vibrant, balanced meal that makes a fantastic choice for a healthy mid-week dinner. By pairing succulent, char-grilled chicken thighs with protein-rich chickpeas and zesty lemon, this dish offers a wonderful depth of flavour without the need for heavy sauces. The heat from the chickpeas slightly wilts the fresh rocket, creating a sophisticated salad that feels both comforting and light.

As a diabetes-friendly recipe, this dish focuses on lean protein and high-fibre legumes to help maintain steady energy levels. It is naturally gluten-free and packed with Mediterranean-inspired ingredients like extra virgin olive oil and fragrant thyme. Serve it outdoors during the summer months or use a griddle pan indoors for a year-round nutritious staple that the whole family will enjoy.

How to make Grilled Chicken with Rocket and Warm Chickpeas

Heat 2 tablespoons oil in a medium skillet over medium-high heat; cook chickpeas, thyme, and red pepper flakes, stirring occasionally, just until warmed through, about 5 minutes. Transfer to a large bowl.

Prepare a grill for medium heat; oil grill grate. Brush chicken with 4 tablespoons oil; season with salt and pepper. Grill chicken, skin side down, until golden brown and lightly charred, 8–10 minutes. Turn and grill until cooked through, 4 minutes longer.

Toss rocket, lemon zest, and lemon juice into chickpeas. Serve with chicken, drizzled with more oil and sprinkled with sea salt.
