This crispy oven-fried chicken offers a lighter, high-protein alternative to traditional deep frying without compromising on texture or taste. By marinating the chicken breasts in a vibrant blend of buttermilk, fresh chives and a hint of Dijon mustard, the meat remains incredibly succulent and tender while the exterior achieves a satisfying, golden crunch. It is an excellent way to enjoy a classic comfort food favourite with significantly less fat.
Perfect for a nutritious midweek meal, this dish is simple to prepare and works brilliantly when served alongside a crisp green salad or roasted root vegetables. Because the recipe uses bone-in breasts, the chicken retains more moisture during the high-heat roasting process, making it a reliable choice for those seeking a wholesome, protein-rich dinner that the whole family will enjoy.
