Summer Corn and Cod Chowder

This summer corn and cod chowder is a light yet nourishing take on the classic coastal stew. By using fresh seasonal sweetcorn and lean white fish, the dish achieves a delicate balance of sweetness and savoury depth without being overly heavy. It is a vibrant, colourful meal that makes the most of summer produce, while providing a satisfying warmth that works just as well on a breezy evening as it does for a weekend lunch.

As a high-protein main course, this recipe is an excellent choice for those seeking a healthy but comforting dinner. The combination of flaked cod and crisp bacon provides a wonderful texture contrast against the tender potatoes and creamy broth. Simply serve with a slice of crusty sourdough bread to soak up the flavourful juices and enjoy a wholesome homemade meal that is ready in under forty minutes.
