Ayran

This traditional Ayran is a classic Middle Eastern and Turkish yoghurt drink known for its cooling properties and distinctive savoury flavour. Made with just three core ingredients, it is a brilliantly simple vegetarian beverage that relies on the contrast between creamy yoghurt, chilled water, and a touch of sea salt. The optional addition of dried mint provide a fragrant, herbal finish that lifts the drink, making it a staple for hot summer days.

Refreshing and naturally hydrating, this homemade yoghurt drink is the perfect accompaniment to grilled meats, spicy stews, or a simple lunchtime wrap. While it is incredibly quick to prepare in a blender, whisking it by hand ensures a lovely frothy head that makes it feel truly authentic. Serve it chilled in tall glasses with plenty of ice for the most invigorating results.
