Israeli Couscous and Tomato Salad

This vibrant Israeli couscous and tomato salad is a sophisticated vegetarian dish that celebrates contrasting textures and bold Mediterranean flavours. The giant couscous provides a pillowy, nutty base that pairs beautifully with the smoky sweetness of grilled tomatoes and the distinct, pleasant bitterness of charred radicchio. It is a wonderful example of how simple, fresh ingredients can be transformed through high-heat grilling to create a lunch that feels both light and deeply satisfying.

Ideal as a standalone healthy meal or served as a side dish for a summer barbecue, this salad is packed with crunchy toasted almonds and salty ricotta salata. The addition of fresh oregano and parsley brings a zesty finish to the dish. This recipe is an excellent choice for those seeking a nutritious, fibre-rich meal that does not compromise on gourmet appeal.
