Perfect Instant Ramen

This elevated take on instant ramen transforms a cupboard staple into a rich, comforting lunch. By gently poaching an egg within the noodles and adding a touch of butter and cheese, the simple broth becomes a silky, savoury sauce. It is a brilliant way to add texture and protein to a quick vegetarian meal, creating a dish that feels far more indulgent than its humble origins suggest.

Ideal for a speedy midweek supper or a satisfying late-night snack, this recipe relies on clever techniques rather than complicated ingredients. The addition of toasted sesame seeds and fresh spring onions provides a much-needed crunch and brightness to balance the creamy flavours. It is a versatile base that works perfectly with any shop-bought noodle pack.

Ingredients for Perfect Instant Ramen

  • 600ml water

  • 1 pack Shin Ramyun or whatever pack of instant ramen you have

  • 1 egg

  • 1/2 teaspoons butter

  • 2 slices American cheese

  • 1/4 teaspoons roasted sesame seeds

  • 1/2 spring onion, green part only, thinly sliced on a bias

Bring the water to a boil in a small pot. Open the ramen package and add the noodles to the water. Cook the noodles for 2 minutes, then add the flavour pack.

About 30 seconds before the noodles are done, turn off the heat and crack in the egg—but don't mix it in. Just pull the hot noodles gently over the raw egg and let it sit for a minute to poach.

Now get a bowl and gently pour everything slowly into it, being careful to not disrupt the egg.

Add the butter, cheese, and sesame seeds to the bowl. Mix it all around. Garnish with the spring onion if you have it.

Eggy, cheesy goodness. Grilled cheese what?
