Ingredients for Sweet Potato Wedges with Lime Mayo

  • 3 sweet potatoes (about 675g), peeled, each cut lengthwise into 8 wedges

  • 2 tablespoons vegetable oil

  • Kosher salt, freshly ground pepper

  • 50g mayonnaise

  • 1/4 teaspoons finely grated lime zest

  • 2 teaspoons fresh lime juice

  • Chopped fresh coriander (for serving)

Preheat oven to 232°C. Toss sweet potatoes and oil on a foil-lined large rimmed baking sheet; season with salt and pepper.

Roast, turning once, until golden brown and crisp, 25-30 minutes.
