These yeasted brown-butter waffles offer a sophisticated twist on a classic breakfast favourite. By browning the butter first, you introduce a rich, nutty depth that perfectly complements the subtle tang of the yeast. This vegetarian recipe relies on a slow-fermented batter, which creates an exceptionally light and airy interior while the outside achieves a satisfyingly crisp finish. It is the ideal choice for a relaxed weekend brunch when you want something a little more special than a standard pancake.
Preparing the batter the night before makes your morning routine effortless, as the yeast does all the hard work while you sleep. The combination of buttermilk and bicarbonate of soda ensures a distinctive rise and a tender crumb. Serve these golden waffles warm from the iron, topped with a generous glug of pure maple syrup and a small pat of butter for a truly indulgent start to the day.

How to make Yeasted Brown-Butter Waffles
Back to contentsMelt 180ml butter in a medium saucepan over medium heat and cook, stirring often, until butter foams, then browns (do not burn), 5–8 minutes. Pour into a medium bowl; let cool.
Whisk milk, buttermilk, sugar, yeast, and salt in a large bowl. Whisk in flour and brown butter; cover with plastic wrap and let batter sit at room temperature at least 8 hours and up to 12 hours.
Heat waffle iron until very hot. Whisk eggs and bicarbonate of soda into batter. Coat waffle iron with nonstick spray and pour batter onto waffle iron, spreading it to cover surface (amount of batter needed will vary according to machine). Cook waffles until golden brown and cooked through.
Serve immediately with maple syrup and more butter.
